Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper, and sauté for about 5-7 minutes until they are soft and caramelized. Season with salt and black pepper.

Melt the Cheese
Reduce the heat to low and pour white queso over the cooked steak and vegetable mixture. Lay the provolone cheese slices on top and cover the skillet with a lid. Allow the cheese to melt for about 2-3 minutes.

Assemble the Sandwich
Cut the submarine rolls in half and toast lightly if desired. Spoon the ribeye, peppers, and onions mixture onto the bottom half of each roll. Top with additional queso if desired, and cover with the top half of the roll.

Serve the sandwiches warm, with your choice of sides.
