Preparation

    Mix the Spices

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, cumin, chili powder, black pepper, oregano, thyme, and salt. Mix well to combine.

    Prepare the Beef

    In a large bowl, add the ground beef and the mixed spices. Use your hands to thoroughly combine the spices into the beef.

    Form Patties

    Divide the seasoned beef into 4 equal portions and shape each portion into a patty, making a slight indentation in the center.

    Slice the Jalapeños

    Remove the stems and seeds from the jalapeños, then slice them into thin rings.

Cooking

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 5-7 minutes on each side, or until they reach an internal temperature of 160°F.

    Add Cheese

    During the last minute of cooking, place about 1/4 cup of pepper jack cheese on top of each patty and cover to melt.

    Toast the Buns

    While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.

    Assemble the Burger

    Place a cheese-topped patty on the bottom half of each toasted bun. Top with sliced jalapeños, a generous drizzle of buffalo sauce, and a handful of crispy onion rings. Place the top bun to finish.

    Serve immediately while hot, with extra buffalo sauce on the side if desired.
