Pork Preparation

    Marinate the Pork

    In a bowl, combine garlic (minced), orange juice, lime juice, cumin, oregano, salt, and black pepper. Mix well.

    Roast the Pork

    Place the pork shoulder in a roasting pan and pour the marinade over it. Cover with foil and roast in a preheated oven at 300°F (150°C) for about 4 hours, or until tender. Remove from oven and let it rest for 30 minutes before shredding.

    Shred the Pork

    Using two forks, shred the pork into bite-sized pieces. Set aside.

Sandwich Assembly

    Prepare the Sauce

    In a small bowl, mix together mayonnaise and yellow mustard until well combined. Set aside.

    Assemble the Sandwiches

    Cut the house rolls in half. Spread a generous amount of the mayo/mustard sauce on each half. On the bottom half, layer shredded pork, sliced ham, Monterey Jack cheese, and sliced pickles.

    Toast the Sandwiches

    Close the sandwich with the top half of the roll. Place the sandwiches in a preheated panini press or skillet. If using a skillet, press down with a heavy pan. Toast until the cheese is melted and the bread is golden brown, about 5-7 minutes.

    Serve

    Remove from heat, slice in half if desired, and serve warm.
