Flatbread Preparation

Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rise the Dough
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Prepare the Filling
Once the dough has risen, preheat the oven to 375°F (190°C). Roll out the dough into an oval shape about 1/4 inch thick.

Layer the Ingredients
On one half of the flatbread, layer the shredded carnitas, sliced ham, shredded Swiss cheese, and pickles.

Fold and Seal
Fold the other half of the flatbread over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.

Bake the Flatbread
Place the flatbread on a baking sheet and bake for 20-25 minutes, or until golden brown and the cheese is melted.

Mix Aioli Ingredients
In a small bowl, combine mayonnaise, Dijon mustard, minced garlic, lemon juice, salt, and black pepper. Whisk until smooth.

Taste the aioli and adjust the seasoning with more salt and pepper if desired.
