    Prepare the Mixture

    In a large mixing bowl, gently combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, green onions, celery, breadcrumbs, beaten egg, salt, and pepper. Be careful not to break the crab meat too much.

    Form the Cakes

    Using your hands, form the mixture into patties, about 3 inches in diameter and 1 inch thick. Place the patties on a parchment-lined baking sheet.

    Cook the Crab Cakes

    Heat olive oil in a large skillet over medium heat. Once hot, add the crab cakes, cooking for 4-5 minutes on each side or until golden brown and crispy. Remove from the skillet and let them rest on a paper towel.

    Mix the Remoulade

    In a small bowl, whisk together the mayonnaise, hot sauce, lemon juice, minced garlic, chopped capers, and chopped parsley until well combined. Adjust seasoning to taste.

Sandwich Assembly

    Toast the Buns

    Slice the brioche buns in half and toast them lightly on a skillet or grill until golden brown.

    Assemble the Sandwich

    Spread a generous amount of Lava Lava Remoulade on the bottom half of each toasted bun. Place a lettuce leaf on top, followed by a crab cake. Add a slice of tomato and some red onion on top of the crab cake. Finish with the top half of the bun.

    Char the Lemon

    On a hot grill or skillet, place the lemon halves cut-side down and char for about 2-3 minutes. Serve alongside the sandwiches.
