For the Coconut Shrimp

Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper.

Set Up Breading Station
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.

Coat the Shrimp
Dip each shrimp first into the flour, then into the beaten eggs, and finally coat with the coconut-panko mixture.

Fry the Shrimp
In a large skillet, heat the vegetable oil over medium heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Combine Ingredients
In a small bowl, mix together the crushed pineapple, honey, soy sauce, rice vinegar, and chili flakes until well combined.

Adjust Flavor
Taste the sauce and adjust sweetness or spiciness by adding more honey or chili flakes if desired.
For the French Fries

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot over medium-high heat. Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.
