Grilling Chicken

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Drizzle with olive oil and season both sides with salt, black pepper, garlic powder, and paprika.

Grill the Chicken
Preheat the grill over medium-high heat. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and allow to rest for 5 minutes before chopping.
Sautéing Bell Peppers

Prepare the Vegetables
While the chicken is grilling, slice the red and green bell peppers and onion into thin strips.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Season with salt and black pepper. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

Melt the Cheese
Once the vegetables are sautéed, lower the heat and sprinkle the jack cheese evenly over the bell peppers. Cover the skillet with a lid for about 2-3 minutes until the cheese has melted.

Serve
Chop the grilled chicken into bite-sized pieces. Serve the sautéed bell peppers with melted jack cheese on a plate, topped with the chopped grilled chicken.
