Preparation of Fish

    Prepare the Fish

    Rinse the fish fillet under cold water and pat it dry with paper towels. Cut the fish into small, bite-sized cubes.

Marinade

    Make the Marinade

    In a large bowl, combine the fresh lime juice, finely chopped red onion, chopped cilantro, and jalapeño (if using). Add salt and black pepper to taste.

    Combine Fish and Marinade

    Add the cubed fish to the marinade. Stir gently to ensure all pieces are coated in the lime juice. The acidity will start to 'cook' the fish.

Chilling

    Chill the Ceviche

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the fish to 'cook' in the lime juice.

Serving

    Serve the Ceviche

    Once the ceviche is ready, give it a gentle stir and serve it in small bowls or on a plate. Accompany with tortilla chips for dipping.
