Method

Prepare the Carnitas

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano. Set aside.

    Sauté Aromatics

    In a large skillet or Dutch oven, heat a tablespoon of oil over medium heat. Add chopped onion and minced garlic, and sauté until fragrant, about 3-4 minutes.

    Slow Cook

    Add the seasoned pork to the pot along with orange juice, lime juice, and bay leaves. Cover and cook on low heat for 6-8 hours, or until the pork is tender and easily shreds.

    Shred the Meat

    Once cooked, remove the pork from the pot and let it cool slightly. Shred the meat using two forks and return it to the pot to soak up the juices.

Prepare the Tacos

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble Tacos

    Place a generous amount of shredded carnitas on each tortilla. Top with chopped onion and fresh cilantro.
