Prepare the Carnitas

Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano. Set aside.

Sauté Aromatics
In a large skillet or Dutch oven, heat a tablespoon of oil over medium heat. Add chopped onion and minced garlic, and sauté until fragrant, about 3-4 minutes.

Slow Cook
Add the seasoned pork to the pot along with orange juice, lime juice, and bay leaves. Cover and cook on low heat for 6-8 hours, or until the pork is tender and easily shreds.

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Serve the assembled tacos with a side of tortilla chips and salsa for dipping.
