Method

Carnitas Preparation

  1. 1

    Prepare the Pork

Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano. Set aside.

  2. 2

    Cook the Pork

In a slow cooker, add the seasoned pork shoulder, garlic cloves, onion (quartered), orange juice, lime juice, and bay leaves. Cover and cook on low for 8 hours or until the pork is tender and shreds easily.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Taco Assembly

  1. 4

    Prepare Tortillas

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

  2. 5

    Assemble Tacos

Fill each tortilla with a generous amount of shredded carnitas. Top with chopped cilantro and diced onion.

Sides Preparation

  1. 6

    Cook Rice

In a pot, combine 2 cups of rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.

  2. 7

    Prepare Beans

Heat the black beans in a saucepan over medium heat until warmed through. Season with salt to taste.
