For the Blackened Salmon

Prepare the Spice Mix
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. Mix well.

Season the Salmon
Rub the spice mix all over the salmon fillets, ensuring they are well coated.

For the Island Rice

Combine Ingredients
In a medium saucepan, combine white rice, coconut milk, water, and salt.

Cook the Rice
Bring the mixture to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and liquid is absorbed.

Add Black Beans
Add the canned black beans (drained and rinsed) and cumin. Stir to combine and cook until heated through. Season with salt to taste.
For the Pineapple Chimichurri

Blend Ingredients
In a blender, combine fresh pineapple, parsley, minced garlic, red wine vinegar, and olive oil. Blend until smooth.

Season the Chimichurri
Taste and season with salt and black pepper as needed. Blend again to incorporate.
