Prepare the Patties
In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined.

Form the Patties
Divide the mixture into two equal portions and shape them into patties, about 1 inch thick.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

Make the Jam
Crumble the cooked bacon and add it back to the skillet along with brown sugar, apple cider vinegar, and black pepper. Stir to combine and cook on medium-low heat for about 15-20 minutes until thickened.

Prepare the Buns
Toast the brioche buns on the grill or in a toaster until golden brown.

Assemble the Burger
On the bottom half of each toasted bun, layer with lettuce, a cooked patty with melted cheese, a generous spoonful of bacon jam, sliced jalapeños, tomato slices, pickles, and a drizzle of lava lava sauce. Top with the other half of the bun.
