Method

Fries Preparation

  1. 1

    Cut and Soak Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

  2. 2

    Dry and Fry Potatoes

After soaking, drain and pat the fries dry with paper towels. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and place on paper towels to drain excess oil. Season with salt immediately.

Topping Preparation

  1. 3

    Cook Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet, drain on paper towels, and crumble into small pieces.

  2. 4

    Prepare Green Onions

Chop the green onions finely, both the white and green parts.

Ranch Dressing Preparation

  1. 5

    Mix Ingredients

In a medium bowl, combine mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dried dill weed, salt, and black pepper. Whisk until smooth and well combined.

  2. 6

    Chill Dressing

Cover the ranch dressing and refrigerate for at least 30 minutes to allow flavors to meld.

Assembly

  1. 7

    Assemble the Fries

Place the hot, cooked fries on a serving platter. Evenly sprinkle the crumbled bacon and shredded cheddar cheese over the fries. Return to the oven for an additional 3-5 minutes, or until the cheese is melted.

  2. 8

    Serve with Ranch

Remove from the oven, garnish with chopped green onions, and serve immediately with the house-made ranch dressing on the side.
