Chicken Marinade
Taco Assembly
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a medium bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Whisk until well blended.
- 2
Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Cooking the Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
- 4
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- 5
Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Assembling the Tacos
- 6
Prepare the Tortillas
Warm the corn tortillas on the grill for about 30 seconds on each side or until soft and pliable.
- 7
Slice the Chicken
Slice the grilled chicken into strips.
- 8
Assemble the Tacos
On each tortilla, add a layer of shredded lettuce, diced tomatoes, sliced chicken, shredded cheese, sour cream, fresh cilantro, and sliced jalapeños.
- 9
Serve
Serve the tacos immediately with extra lime wedges on the side, if desired.
