Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Rinse the calamari under cold water and pat dry with paper towels. This helps ensure they fry up crispy.

  2. 2

    Make the Batter

In a mixing bowl, combine the all-purpose flour, beer, salt, black pepper, garlic powder, and paprika. Whisk until smooth and there are no lumps.

  3. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle immediately.

  4. 4

    Fry the Calamari

Dip each calamari ring into the batter, allowing any excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown, then remove and drain on paper towels.

Marinara Sauce Preparation

  1. 5

    Cook the Sauce

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

  2. 6

    Combine Ingredients

Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

  3. 7

    Simmer the Sauce

Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally. Add chopped fresh basil just before serving.
