    Prepare the Beef Tenderloin

    Preheat your oven to 400°F (200°C). Season the wagyu beef tenderloin generously with salt and black pepper. In a skillet over medium-high heat, add olive oil and sear the beef on all sides until browned, about 3-4 minutes per side.

    Finish the Beef

    Transfer the seared beef to the oven and roast for 15-20 minutes for medium-rare, or until it reaches your desired doneness. Remove from the oven, cover with foil, and let it rest for 10 minutes.

    Roast the Broccoli

    While the beef is roasting, toss the broccoli florets with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 15 minutes or until tender and slightly charred. In the last few minutes of roasting, sprinkle the crushed pistachios over the broccoli.

    Make the Beef Jus

    In the same skillet used for searing the beef, add the beef stock and scrap up any browned bits from the bottom. Bring to a simmer and reduce for about 10 minutes. Stir in the aged balsamic vinegar and let it simmer for another 5 minutes.

    Slice the rested beef tenderloin and serve it alongside the roasted broccoli topped with pistachio crumbs. Drizzle the beef jus over the beef and enjoy!
