Prepare the Shrimp
In a mixing bowl, combine the shrimp with Cajun seasoning, ensuring they are well-coated. Set aside.

Make the Batter
In a separate bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. In another bowl, combine the beaten egg and milk. Gradually add the wet mixture to the dry ingredients, stirring until smooth.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Dip the seasoned shrimp into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Assemble the Po’boys
Slice the baguette in half lengthwise. Spread a generous amount of remoulade sauce on the inside. Layer with shredded lettuce, sliced tomato, and fried shrimp.

Close the sandwich and serve immediately, with extra remoulade on the side if desired.
