Prepare the Ingredients

Rinse the tilapia filet and pat it dry with paper towels. Season both sides with salt and pepper.

Cook the Rice

In a pot, bring 2 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender.

Boil the New Potatoes

In a separate pot, place the new potatoes and cover with water. Boil for 15-20 minutes, or until tender. Drain and set aside.

Sear the Tilapia

In a skillet, heat olive oil over medium-high heat. Generously coat one side of the tilapia with blackening seasoning. Place the seasoned side down in the skillet. Cook for about 3-4 minutes until it forms a blackened crust, then flip and cook for an additional 2-3 minutes until cooked through.

Prepare the Veggie

Sauté or steam the vegetable of your choice according to package instructions or until tender.

Assemble the Dish

On a plate, create a bed of rice. Place the blackened tilapia on top, alongside the new potatoes and your choice of vegetable.
