Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

Add Garlic and Tomatoes
Stir in the minced garlic and cook for an additional minute. Pour in the canned diced tomatoes (with their juices) and mix well.

Season the Mixture
Sprinkle in the Cajun seasoning, salt, and black pepper. Stir to combine and let the mixture simmer for about 10 minutes on low heat.

Cook the Shrimp
Add the shrimp to the skillet and cook for 5-7 minutes, or until the shrimp turn pink and are cooked through.
