Prepare the Base
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, and sauté until softened, about 5 minutes.

Add Garlic and Seasoning
Stir in the minced garlic and Creole seasoning. Cook for another minute until fragrant.

Incorporate Coconut Milk
Pour in the coconut milk, stirring well to combine. Season with salt and black pepper. Let it simmer for another 5 minutes to meld the flavors.

Garnish and Serve
Remove from heat, sprinkle with fresh parsley, and serve hot over rice or pasta.
