1. Prepare the Ingredients

Chop the onion, green bell pepper, celery, and mince the garlic. Slice the Andouille sausage and Tasso ham.

2. Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion, green bell pepper, celery, and garlic. Sauté for about 5 minutes until the vegetables are tender.

3. Brown the Meats

Add the sliced Andouille sausage and Tasso ham to the pot. Cook for an additional 5 minutes until the meats are browned.

4. Add Rice and Spices

Stir in the rice, Cajun seasoning, diced tomatoes, and salt and pepper. Mix well.

5. Add Broth

Pour in the chicken broth and bring the mixture to a boil.

6. Simmer

Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.

7. Garnish and Serve

Once cooked, fluff the jambalaya with a fork, garnish with sliced green onions, and serve hot.
