Prepare the Oysters
Rinse the shucked oysters under cold water and pat dry with paper towels.

Make the Battering Mixture
In a bowl, combine corn flour, Cajun seasoning, and a pinch of salt.

Coat the Oysters
Dip each oyster into buttermilk, then dredge in the seasoned corn flour mixture, making sure they are well coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully place the coated oysters in the hot oil and fry for about 2-3 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fried oysters from the oil and drain on paper towels. Serve hot with lemon wedges.
