Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Marinate the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes to enhance flavor and tenderness.

Prepare the Breading
In a large bowl, mix the yellow cornmeal, flour, Cajun seasoning, salt, and black pepper until well combined.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off, then dredge each fillet in the cornmeal mixture, ensuring they are well coated.

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, cooking in batches if necessary. Fry for 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the catfish from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite sides.
