    Prepare the Crawfish

    In a mixing bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In a separate bowl, whisk together the eggs and milk.

    Batter the Crawfish

    Dip the crawfish tails into the egg mixture, then dredge them in the flour mixture until fully coated.

    Fry the Crawfish

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the battered crawfish tails, frying them in batches until golden brown, about 3-4 minutes per batch.

    Prepare the Baguette

    While the crawfish are frying, slice the baguette lengthwise and lightly toast it if desired.

    Assemble the Po’boy

    Place a generous amount of lettuce on the bottom half of the baguette, followed by the fried crawfish tails. Top with slices of fresh tomato and a drizzle of mayonnaise. Close the sandwich and serve immediately.
