Cook the Pasta
In a large pot of boiling salted water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

Sauté the Sausage
In a large skillet, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes.

Add Crawfish and Garlic
Add the garlic to the skillet and sauté for an additional minute. Then, stir in the crawfish tail meat, salt, black pepper, and cayenne pepper. Cook for another 3-4 minutes until heated through.

Make the Cream Sauce
Reduce the heat to low and add the butter and heavy cream to the skillet. Stir in the Parmesan cheese until melted and creamy.

Combine and Serve
Toss the cooked fettuccine in the skillet with the sauce and crawfish mixture. Garnish with sliced green onions. Serve hot.
