Marinate the Chicken
In a bowl, toss the chicken tenders with Cajun seasoning, salt, and pepper. Let them marinate for at least 30 minutes.

Prepare the Breading
In one bowl, combine flour, cornstarch, salt, and pepper. In another bowl, whisk together eggs and milk.

Coat the Chicken
Dredge each chicken tender in the flour mixture, then dip in the egg mixture, and finally coat with the flour mixture again to ensure a thick, crispy batter.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the coated chicken tenders and fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the chicken strips from the oil and drain on paper towels. Serve hot with your choice of dipping sauce.
