Cooking Instructions
- 1
Prepare the Chicken
In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with Cajun seasoning, salt, and black pepper. Add the chicken to the skillet and cook until browned, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- 2
Sauté Vegetables
In the same skillet, add the chopped onion and red bell pepper. Sauté for about 5 minutes until they start to soften. Add minced garlic and cook for another minute until fragrant.
- 3
Make the Sauce
Add the diced tomatoes (with juice) and chicken broth to the skillet. Stir to combine and bring to a simmer.
- 4
Combine and Cook
Return the chicken to the skillet, cover, and let it cook in the sauce for about 15-20 minutes, or until the chicken is cooked through.
- 5
Cook the Pasta
While the chicken is cooking, cook the pasta according to package instructions. Drain and set aside.
- 6
Serve
Once the chicken is done, remove it from the skillet and slice it. Toss the cooked pasta with the sauce in the skillet. Top with sliced chicken and garnish with chopped green onions before serving.
