    In a large bowl, combine the ground pork shoulder and pork liver. Add the cooked rice, chopped onions, green onions, minced garlic, Cajun seasoning, salt, and black pepper. Mix thoroughly until well combined.

    If using jalapeños, finely chop them and add to the mixture. Alternatively, add smoked paprika for a smoky flavor. Adjust seasoning to taste.

    Soak the pork casings in water for at least 30 minutes to soften. Rinse thoroughly inside and out.

    Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overfill. Tie off the ends securely.

    In a large pot, bring water to a simmer. Add the sausages and cook for about 20-30 minutes until cooked through. Alternatively, you can grill or smoke the sausages for enhanced flavor.
