    Prepare the Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for about 18 minutes or until the rice is tender. Fluff with a fork and set aside.

    Cook the New Potatoes

    In a separate pot, add new potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Prepare the Veggie

    Steam or sauté your choice of vegetable until tender, about 5-7 minutes. Set aside.

    Season the Catfish

    Rub the catfish fillet with blackening seasoning on both sides.

    Cook the Catfish

    In a skillet, heat olive oil over medium-high heat. Add the seasoned catfish fillet and cook for about 4-5 minutes on each side or until blackened and cooked through.

    Serve

    On a plate, create a bed of rice, place the cooked catfish on top, arrange the new potatoes on the side, and add your choice of vegetable. Enjoy!
