Prepare the Beans
Rinse the red beans and soak them in water for at least 8 hours or overnight. Drain and set aside.

Cook the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.

Add Sausage and Beans
Stir in the sliced Andouille sausage, soaked red beans, Cajun seasoning, bay leaves, and chicken broth. Bring to a boil.

Simmer
Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

Season and Serve
Remove the bay leaves. Season with salt and black pepper to taste. Serve the beans over a bed of dirty rice and garnish with chopped green onions.
