Stir in canned diced tomatoes, cayenne pepper, salt, and black pepper. Let simmer for about 10-15 minutes until slightly thickened. Stir in fresh parsley before removing from heat.

Cook the Andouille Sausage
In a separate skillet, cook the Andouille sausage links over medium heat, turning occasionally, until browned and heated through, about 8-10 minutes.

Assemble the Po'boys
Slice the French baguettes in half lengthwise. Place shredded lettuce and sliced tomatoes on the bottom half of each baguette. Top with the cooked Andouille sausage.

Sprinkle Monterey Jack cheese over the sausage and spoon the Sauce Piquant generously on top. Close the sandwiches and serve immediately.
