    Marinate the Alligator Meat

    In a bowl, combine the alligator meat with buttermilk and Cajun seasoning. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Coating

    In a separate bowl, mix together the cornmeal, flour, salt, and black pepper.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Alligator Bites

    Remove the alligator meat from the refrigerator. Dredge each piece in the cornmeal mixture until well coated.

    Fry the Bites

    Carefully place the coated alligator pieces into the hot oil in batches. Fry for about 3-4 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Serve

    Serve the alligator bites hot with tartar sauce and Hazel dressing on the side.
