Prepare the Marinade
In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, sriracha sauce, lime juice, salt, and black pepper until well combined.
Marinate the Pork
Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for best results.
Preheat the Oven
Preheat your oven to 200°C (400°F).
Sear the Pork
In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear the pork on all sides until browned, about 2-3 minutes per side.
Bake the Pork
Pour the reserved marinade over the seared pork. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
Rest and Slice
Remove the pork from the oven and let it rest for 5-10 minutes before slicing it into medallions.
