1. Marinate the Pork

In a bowl, combine soy sauce, mirin, sesame oil, minced garlic, and grated ginger. Place the pork tenderloin in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.

Preheat your hibachi grill or any grill to medium-high heat.

3. Grill the Pork

Remove the pork from the marinade and shake off excess liquid. Season with salt and black pepper. Place the pork on the grill and cook for about 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

4. Rest and Slice

Once cooked, remove the pork from the grill and let it rest for 5 minutes. After resting, slice the pork tenderloin into medallions.
