    Prepare the Brisket

    Trim any excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

    Make the Rub

    In a bowl, mix together kosher salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, and brown sugar until well combined.

    Season the Brisket

    Rub the spice mixture evenly over the entire surface of the brisket. Wrap it in plastic wrap and refrigerate for at least 12 hours, preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).

    Smoke the Brisket

    Place the brisket in the smoker fat side up. Add the soaked wood chips to the smoker. Smoke for about 1.5 hours per pound of brisket, or until the internal temperature reaches 195°F (90°C).

    Baste and Rest

    During the final hour of smoking, baste the brisket with a mixture of apple cider vinegar and beef broth. Once done, remove from the smoker and let it rest for at least 30 minutes before slicing.
