Prepare the Filling
In a large skillet over medium heat, add a drizzle of oil. Add the ground pork or chicken and cook until browned. Stir in the garlic, ginger, soy sauce, sesame oil, cabbage, carrots, and green onions. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and let cool.

Assemble the Eggrolls
Take an eggroll wrapper and place it on a clean surface with a corner pointing towards you. Spoon 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a little water.

Fry the Eggrolls
Heat oil in a deep frying pan over medium heat. Once hot, carefully place the eggrolls in batches and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
