    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes, or until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pitas

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.

    Cover the flattened circles with a damp cloth and let them rest for 30 minutes.

    Preheat your oven to 475°F (245°C). If using a baking stone, place it in the oven to heat up.
