Flan Preparation

    Make the Caramel

    In a medium saucepan, combine sugar and water over medium heat. Stir until sugar dissolves, then stop stirring and let it boil until it turns a golden caramel color. Quickly pour the caramel into a round flan mold, tilting to coat the bottom evenly. Set aside to cool.

    Prepare the Flan Mixture

    In a blender, combine coconut milk, sweetened condensed milk, eggs, ground cardamom, and vanilla extract. Blend until smooth and well combined.

    Combine and Bake

    Pour the flan mixture over the set caramel in the mold. Place the flan mold in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the flan mold. Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes or until a knife inserted in the center comes out clean.

    Cool and Serve

    Remove the flan from the oven and let it cool in the water bath for 30 minutes. Then refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, invert onto a serving plate, and enjoy!
