Preheat your oven to 375°F (190°C). Wash the bell peppers, cut the tops off, and remove the seeds and membranes. Set them aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
