Tartar Sauce

Prepare the Tartar Sauce
In a medium bowl, combine the mayonnaise, finely chopped pickles, lemon juice, and capers.

Season the Sauce
Add salt and black pepper to the mixture. Stir well until all ingredients are thoroughly combined. Refrigerate until serving.

Prepare the Potatoes
Peel and cut the russet potatoes into thick strips to make chips.

Soak the Chips
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Fry the Chips (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for about 3-4 minutes until they are golden brown and crispy. Remove and sprinkle with salt.

Prepare the Fish
Cut the cod fillets into bite-sized chunks.

Make the Batter
In a bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Fry the Fish
In a deep fryer or large pot, heat 2 cups of vegetable oil to 375°F (190°C). Dip each piece of cod into the batter, allowing excess to drip off, then carefully place into the hot oil. Fry in batches for about 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.
