Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Flip halfway through cooking for even crispiness. Once done, place the bacon on a paper towel to drain excess grease.

Prepare the Vegetables

Wash the lettuce thoroughly and pat dry. Slice the tomato and avocado into even slices. Set aside.

Make the Chipotle Mayo

In a small bowl, mix the chipotle mayo with a pinch of salt and pepper to taste. Adjust the heat by adding more chipotle sauce if desired.

Toast the Bread

Toast the slices of bread until golden brown. This can be done in a toaster or on a skillet.

Layer the Ingredients

On one slice of toasted bread, spread 1 tablespoon of chipotle mayo. Layer with crispy bacon, a generous amount of lettuce, sliced tomato, and avocado. Top with a portion of pico de gallo.

Finish the Sandwich

Spread another tablespoon of chipotle mayo on a second slice of bread and place it on top of the sandwich, mayo side down. Press gently to secure the layers.

Cut and Serve

Cut the sandwich in half diagonally and serve immediately, with any remaining pico de gallo on the side.
