Spicy Buffalo Chicken Recipe

Prepare the Chicken

Marinate the Chicken
In a bowl, combine the chicken breasts with olive oil, buffalo sauce, salt, and black pepper. Make sure the chicken is well coated. Let it marinate for at least 30 minutes.

Cook the Chicken
Grill or fry the marinated chicken breasts over medium heat for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Once cooked, shred or chop the chicken into bite-sized pieces.
Make the Dressing

Blend the Ingredients
In a food processor, combine chopped walnuts, mayonnaise, Greek yogurt, apple cider vinegar, salt, and black pepper. Blend until smooth and creamy.

Adjust Seasoning
Taste the dressing and adjust seasoning with more salt or pepper if needed.
Assemble the Salad

Combine the Salad Base
In a large bowl, toss together the mixed greens, shredded carrots, diced celery, diced cucumbers, diced tomatoes, and shredded jack cheese.

Add Chicken
Top the mixed greens with the cooked chicken pieces and sprinkle with bleu cheese crumbles.

Drizzle the walnut bleu cheese dressing over the salad and toss gently to combine.
