Method

Preparation

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, cook the locally made spaghetti noodles according to package instructions until al dente. Drain and set aside.

Cooking Seafood

  1. 2

    Sauté the Garlic

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

  2. 3

    Cook the Seafood

Add the scallops, shrimp, and diced salmon fillet to the skillet. Season with salt, black pepper, and Italian seasoning. Cook for about 3-4 minutes, turning occasionally until the seafood is just cooked through.

Making the Sauce

  1. 4

    Add Wine and Vegetables

Pour in the dry white wine and bring to a simmer. Add the halved cherry tomatoes, sliced mushrooms, and chopped green onions. Cook for an additional 2-3 minutes, allowing the flavors to meld.

  2. 5

    Finish the Sauce

Stir in the remaining 2 tablespoons of butter until melted and the sauce becomes creamy.

Serving

  1. 6

    Combine and Serve

Add the cooked spaghetti noodles to the skillet and toss to coat in the sauce. Serve hot, topped with grated Parmesan cheese.
