Prime Rib Preparation

    Season and Roast the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season it generously with salt, black pepper, and garlic powder. Place the roast on a rack in a roasting pan and roast in the preheated oven for 20 minutes.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1 to 1.5 hours. Remove from the oven and let it rest for 15-20 minutes before slicing thinly.

Au Jus Preparation

    Make the Au Jus

    In a saucepan, combine beef broth, Worcestershire sauce, minced garlic, sliced onion, and thyme. Bring to a simmer over medium heat and let it cook for about 15 minutes, until the flavors meld. Strain before serving.

Sandwich Assembly

    Toast the Rolls

    While the au jus is simmering, cut the Parmesan Philly rolls in half and spread butter on the cut sides. Toast them under a broiler until golden brown.

    Assemble the Sandwiches

    Layer the shaved prime rib on the bottom half of each toasted roll. Top with Swiss cheese slices and place under the broiler until the cheese is melted, about 1-2 minutes. Close the sandwiches with the top halves of the rolls.
