Prepare the Filling

Mix the filling ingredients
In a large bowl, combine the ground pork, finely chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
Assemble the Dumplings

Fill the wrappers
Take a dumpling wrapper and place about 1 tablespoon of the filling mixture in the center. Be careful not to overfill.

Seal the dumplings
Moisten the edges of the dumpling wrapper with water. Fold the wrapper in half to create a half-moon shape, then press the edges together to seal. You can pleat the edges for a decorative touch.

Continue filling and sealing the remaining wrappers until all the filling is used.
Cook the Dumplings

Heat the oil
In a large skillet, heat the vegetable oil over medium heat.

Fry the dumplings
Once the oil is hot, add the dumplings in a single layer. Fry for about 2-3 minutes or until the bottoms are golden brown.

Finish frying
After steaming, remove the lid and let any remaining water evaporate. Cook for an additional 2-3 minutes until the bottoms are crispy again.

Plate the dumplings
Transfer the pot stickers to a serving platter.

Serve with sauces
Serve hot with plum sauce and sriracha chili sauce on the side for dipping.
