Osso Buco Pork Shank Recipe

Method

Pork Shank Preparation

    Season the Pork

    Pat the pork shanks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Pork

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the pork shanks for about 4-5 minutes on each side until browned. Remove and set aside.

    Cook the Vegetables

    In the same pot, add diced carrots, onion, and celery. Sauté for about 5-7 minutes until softened. Add minced garlic and cook for another 1-2 minutes.

    Add Tomato Paste

    Stir in the tomato paste and cook for 2 minutes to deepen the flavor.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to remove any browned bits. Bring to a simmer and cook for about 5 minutes.

    Add Stock and Herbs

    Add the stock, thyme, bay leaf, and return the pork shanks to the pot. The liquid should cover about 2/3 of the shanks.

    Braise

    Cover the pot and transfer to a preheated oven at 350°F (175°C). Braise for about 2 hours until the meat is tender and falling off the bone.

Garlic Mashed Potatoes Preparation

    Boil Potatoes and Garlic

    In a large pot, add cubed potatoes and whole garlic cloves. Cover with water and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and garlic. Return to the pot, add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Spoon the garlic mashed potatoes onto plates and top with the braised pork shank and sauce.
