Prepare Blackening Seasoning

    Mix the Spices

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well to create an even seasoning blend.

Prepare Chicken

    Season the Chicken

    Pat the chicken breasts dry with paper towels. Rub olive oil all over the chicken pieces, then generously coat both sides with the blackening seasoning mix.

Cook the Chicken

    Heat the Pan

    In a large cast-iron skillet or heavy pan, heat over medium-high heat until very hot.

    Cook the Chicken

    Add the seasoned chicken breasts to the hot pan. Cook for about 5-7 minutes on each side until the chicken is blackened and cooked through (internal temperature should reach 165°F or 75°C).

    Garnish and Serve

    While the chicken is cooking, chop the fresh parsley. Once the chicken is done, remove it from the pan and let it rest for a few minutes. Serve the blackened chicken with lemon wedges, alongside cooked rice, and sprinkle with fresh parsley.
