Preparing the Fish

Prepare the Cod
Pat the cod fillets dry with paper towels. Cut them into strips, about 1 inch wide.

Batter the Fish
In a mixing bowl, combine the all-purpose flour, cornstarch, cajun seasoning, salt, and black pepper. Mix well. Dredge each piece of cod in the flour mixture, ensuring an even coat.

Fry the Fish
In a large frying pan, heat the oil over medium-high heat. Once hot, carefully add the battered cod strips. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side or until pliable.

Assemble the Tacos
Place a few pieces of fried cod on each tortilla. Top with shredded cabbage, a generous drizzle of cajun aioli, and a spoonful of pico de gallo.

Fold the tortillas in half and serve immediately while hot. Enjoy your fish tacos!
