Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps the meat cook evenly.

Take the two slices of bacon and carefully wrap them around the filet mignon, securing the ends with toothpicks if necessary.

Generously season both sides of the filet mignon with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped filet mignon to the skillet.

Sear the filet mignon for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness (internal temperature of 130°F for medium-rare).
