Prepare the Elk
Season the elk medallions with salt and black pepper on both sides.

Rest the Elk
Remove the elk from the skillet and let it rest for 5 minutes before slicing.
Garlic Mashed Potatoes

Add Garlic
In the last 5 minutes of cooking, add the peeled garlic cloves to the pot with the potatoes.

Blackberry Red Wine Sauce

Combine Ingredients
In a small saucepan, combine the blackberries, red wine, honey, and a pinch of salt.

Simmer the Sauce
Bring to a simmer over medium heat and cook for about 10-15 minutes until the sauce has thickened and the blackberries have broken down.

Finish the Sauce
Remove from heat and stir in the butter until melted and the sauce is glossy.
